€˜Woo hoo – It€™s a British Heatwave Weekend!€™ summertime family recipe from @ScottDunnTravel and children€™s food expert @fiona_faulkner €“ creator of our new Scott Dunn Explorers children€™s club menu.

This, along with other healthy recipes, is currently going down a storm in Scott Dunn’s family-friendly resorts in the Med. As the weather all over the UK is Med-worthy too, it seemed a great recipe to share.

Avocado & Lime €˜Arriba€™ Ice Cream

 Serves approx 10-12

 RECIPE PREP TIME: Approx 10 minutes

 RECIPE COOK TIME: No cook recipe €“ freezes in 3 hours

 No ice-cream maker required! This is a little nod to those flavours of Mexico €“ avocado and lime. Create an adult€™s batch by adding shards of fresh mint at the very end €“ and top with chopped pistachios just before serving €“ summer in a cone!

INGREDIENTS

4 (ripe) avocados

Juice of 2 limes

200g caster sugar

300 ml double cream

½ tsp vanilla extract (optional)

METHOD

1. Place the avocado and lime juice in a blender and whizz up until it€™s a smooth puree.

2. Put the avocado-lime mix in a food processor with a whisk attachment (or use a handheld whisk) and add the double cream, caster sugar, and vanilla extract. Whisk on a medium-high setting for about 3 minutes.

3. Place in a freezable container for 3-4 hrs. (Any longer and it€™s a bit hard to scoop out. This isn€™t in itself a detriment to the recipe €“ just remember to let it thaw slightly before serving for a creamier €˜soft scoop€™ effect).
