
Chicken Burgers
Makes 8 - Prep time: 15 mins - Cook time: 8 Mins - Suitable for freezing
3 slices white bread
1 tbsp sunflower oil
1 large red onion, finely chopped
1 clove garlic, crushed
250g/9oz minced chicken
1 tbsp dark soy sauce
2 tbsp tomato chutney
50g/2oz dessert apple, grated
Salt and freshly ground black pepper
Sunflower oil, for frying
Put the bread into a food processor and whiz to make fine crumbs.
Heat the oil in a saucepan, then sauté the onion and garlic until softened. Tip into a bowl with two-thirds of the breadcrumbs and all the remaining ingredients, then season to taste.
Using your hands, shape the mixture into eight burgers and coat in the remaining breadcrumbs. Heat the oil in a large frying pan and fry the burgers for three to four minutes each side.
